Welcome to Smokin Soul
Smokin Soul is the brainchild of Pat Conway and Jim O’Brien and has been trading since the summer of 2016. We are offering a very unique, original, traditional and sustainable menu and product unlike anything that is currently being offered by mobile units anywhere in Ireland and further afield.
Pat has a background in Agriculture and Construction, Pat has held positions with multinational companies as a supervisor and operations manager. Pat completed a Higher National Diploma in Agriculture in 2001. Jim has a background in Construction and Culinary Hospitality. Jim has held a position as Chef in Bistro Pubs in London for four years and is a fully qualified carpenter. During his career as carpenter he has been the site manager for the companies he has worked for. Jim has run many lucrative projects in such places as Covent Garden and the Royal Albert Hall.
We have created a travelling food theatre that is currently unrivalled. We put a huge emphasis on the quality, process and accuracy of everything we do. We are currently offering the likes of 16 hour Beef Brisket, 20 hour pulled pork, 9 hour pork loin ribs, jerk chicken, homemade burgers, Texas hot-links and smoked sausage all of which come from our home built smokers and bbqs. For the summer of 2019 we have brought along our open fire units which we use to cook Asado style.
On this rig we have cooked full lambs, large ribs, whole chickens, beef rib, flank steak and veg. We have also mastered the art of cooking meat directly on charcoal called dirty or caveman cooking. As you can imagine from what you have read above we have a lot going on and a lot more to come online.
We are currently perfecting cooking a whole cow over open fire, we have built the apparatus that will cook it and with great expense to ourselves we trialled this several times and we are now happy to offer this as an option as part of the Smokin Soul package.
Going into 2020 we want to offer packages to events, festivals, corporate and private functions that can be tailored to suit the client.
